- blanch the snow peas in boiling water for 2-3 min; transfer them immediately to an ice bath - drain the blanched snow peas - prepare the rest of the ingredients
– whisk the olive oil and red wine vinegar in a small bowl until well combined. Add dill - transfer all the veggies to a large mixing bowl. - pour the dressing over the salad - toss gently to combine
- with side of crusty bread - add fresh herbs or toasted nuts - serve a side to grilled chicken or fish or lamb chops - add fresh berries - enjoy with a glass of crisp white wine
