- wash, peel and chop 6-8 persimmons - place them in a heavy bottom pot - add honey, spices, orange juice - bring to a gentle simmer - cook stirring occasionally for about 60 minutes
- once the persimmons are soft and cooked down, add the vanilla and cook few more minutes - remove from the heat, let it cool - use immersion blender and blend in batches until smooth - taste and adjust if needed - enjoy
- on toast, biscuits, waffles or pancakes - with yogurt, or granola - use as a filling for cookies or cakes - mix into smoothies - glaze for roasted meats
