- wash and cut the rhubarb - place the rhubarb on a baking sheet; drizzle with olive oil - roast in the oven set to 400F for 15-20 minutes
- transfer the roasted rhubarb to a heavy bottom pan - add all the other ingredients - bring the mixture to a simmer. Lower the smoker temperature to 250F and let it cook for about 30-40 minutes, stirring occasionally - blend, taste, cool and enjoy
