- preheat your smoker to 225-250F - pat dry the ribs - remove the silver skin from the ribs - apply mustard all over the meat - generously season on both sides - place directly on the smoker grates - smoke for 3 hours
- after 3 hr smoke, remove the ribs and place them on a sheet of foil - generously apply BBQ sauce on both sides - place the butter on top of the meat - wrap the ribs tightly with the foil - return to the smoker for another 2hrs
- after 2 hr wrapped smoke, carefully remove the ribs from the smoker - open the foil! watch out for the hot steam - return the ribs to the smoker for another hour or so - when done, apply more BBQ sauce, rest, slice and enjoy
