- shell the fava beans and add them to boiling water - blanch for 2-3 min and transfer immediately to an ice bath - drain the blanched fava beans and remove the outer skins
– sauté the beans in melted butter or oil for 2-3 minutes. - in a small bowl combine the ingredients for the dressing - in a large bowl combine fava beans, parmesan cheese, onion, cucumbers and prosciutto - top with the dressing, mix to combine and enjoy
- with side of crusty bread - over quinoa, couscous or farro - pair with grilled chicken or fish - as a side to chilled soup
