- roast the tomatoes, onions, herbs - transfer to a large (wide) pot - simmer 15-20 minutes - remove the herb stems and puree using immrsion blender - if you want an extra smooth sauce you can pass it through the food mill
- return the smooth puree to the wide pot and simmer 20 min - taste and adjust to your liking - cool completely before portioning - use jars or freezer safe containers, leave 1 inch head space for expansion
