- preheat your smoker to 375F - in a large bowl combine washed and pitted cherries with honey, lemon juice, zest and vanilla - in another bowl prepare the crumb topping - start by dry roasting the pecans, set aside to cool - combine butter, flour, sugar and cinnamon
- add cooled pecans and mix lightly - transfer the cherries into the baking dish - sprinkle the crumb topping evenly over the cherries - bake 40-50 min, until the topping is golden brown and bubbling - remove, cool and serve
