- In a large bowl, cream ½ cup (115 g) softened unsalted butter and ¾ cup (135 g) coconut sugar until light and slightly fluffy (about 2–3 minutes with a hand mixer).
- Add 2 large eggs, one at a time, mixing briefly until combined.



- Mix in 1 tsp vanilla, fresh orange zest (from two oranges), and ½ tsp almond extract (optional).



- Stir in ½ cup (120 g) Greek yogurt or sour cream and ⅓ cup (80 ml) fresh orange juice until smooth.
- Fold the dry ingredients into the wet mixture just until combined; stop when you see no streaks of flour.
- Scoop about 1/3 of the batter into a separate small bowl; this will be your cranberry layer batter.
