Need help with this recipe?

Most apple cakes tend to taste standard, sweet, soft, and quickly forgotten.

In Poland, autumn baking is a cherished tradition rooted in heritage classics like jabłecznik and rustic fruit tarts. Drawing on those Eastern European roots, I wanted to create an apple cake that felt comforting, but without spending hours in the kitchen.

This One-Bowl Brown Butter Apple Cake with Rye, Ginger & Cardamom is it.

By swapping some of the flour for light rye, we add an earthy depth that plain all-purpose flour simply can’t deliver. Combined with the nutty flavor of brown butter, a zesty kick of fresh ginger, and warm cardamom, every bite delivers flavor. Coconut sugar melts into a gorgeous caramelized crust, while full-fat Greek yogurt keeps the crumb tender.

If you love cozy autumn bakes that break the mold, add this to your rotation. Let’s bake!

Key Ingredients, Variations and Substitutions

Brown Butter – this is the foundation of the cake’s flavor. Cooking the butter until the milk solids turn golden and nutty takes just a few extra minutes, but the payoff is enormous. Let it cool until lukewarm before mixing in the other ingredients, but don’t let it solidify. If you’re short on time, you can use melted regular butter, but the flavor will be noticeably simpler.

Greek Yogurt – full-fat Greek yogurt keeps the crumb moist and tender without making the batter heavy. It also adds a very subtle tang that balances the sweetness. Sour cream works as a 1:1 substitute if that’s what you have on hand.

Fresh Apples – aim for firm, sweet-tart apples. Pink Lady, Honeycrisp, or Granny Smith all work well. Softer apples can turn mushy during baking and release too much moisture, which can make the cake center wet. Peel, core, and dice them into roughly 1 to 1.25 cm cubes so they bake evenly and stay distinct in the crumb.

Flour Mixture (All-Purpose + Light Rye) – using two flours gives the cake structure and character. All-purpose flour provides lift and stability, while rye flour adds flavor. Don’t swap in whole rye or dark rye flour here – they’re much more assertive and will throw off the balance.

Other ingredients: fresh ginger, coconut sugar, baking powder, cinnamon, cardamom, nutmeg, fine salt, vanilla extract, lemon zest, eggs.

Equipment you will need

  • 9-inch springform pan
  • Parchment paper
  • Light-colored saucepan (for browning butter)
  • Large heatproof mixing bowl
  • Sieve
  • Spatula
  • Whisk
  • Box grater or microplane
  • Peeler and sharp knife
  • Cutting board
  • Measuring cups and spoons
  • Cooling rack

Top Tips

Let the brown butter cool before mixing – if it’s too hot when you add the eggs, they’ll scramble. Lukewarm and still liquid is exactly where you want it.

Pat the apples dry if they seem wet – excess moisture from the apples can make the center of the cake take longer to set or feel slightly underbaked even when it’s technically done.

Fold, don’t stir – the batter is thick, and that’s intentional. Fold gently with a spatula just until the flour disappears and the apples are evenly distributed.

Step-by-step instructions

  • Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  • Melt 170 g of butter in a light-colored saucepan over medium heat. Cook, stirring or swirling occasionally, until the milk solids turn golden brown and the butter smells nutty. Immediately pour into a large heatproof mixing bowl, scraping in all the brown bits. Let cool until lukewarm but still liquid. Use the full yield from the starting 170 g of butter. Do not add extra butter or water.
  • Peel and core the apples, then weigh out 450 g. Dice into 1–1.25 cm cubes. Pat dry if visibly wet. Firm Pink Lady apples work well for this cake.
  • Mix the wet ingredients. Whisk 130 g of coconut sugar into the cooled brown butter. Add 3 eggs, 200 g of Greek yogurt, 1 tsp of vanilla extract, 1 tsp of finely grated lemon zest, and 15 g of finely grated fresh ginger. Whisk until smooth and evenly combined.
  • Add the dry ingredients. Place a sieve over the large bowl. Add 220 g of all-purpose flour, 60 g of light rye flour, 2 tsp of baking powder, 1½ tsp of cinnamon, ¼ tsp of cardamom, ¼ tsp of nutmeg, and ½ tsp of fine salt. Briefly stir the dry ingredients together in the sieve, then sift them over the wet mixture.
  • Fold with a spatula until the flour is nearly incorporated. The cake batter will be thick. Avoid overmixing.

  • Add the diced apples and gently fold until evenly distributed, with no dry flour remaining. Fold just enough to combine, keeping the cake tender and the apple pieces distinct. Do not let the batter sit for long.
  • Spread the batter evenly in the prepared pan. Sprinkle 1 tbsp of coconut sugar over the top of the cake, and transfer the pan to the oven.

  • Bake for approximately 45–55 minutes, checking around 40–45 minutes. The top should be golden and the center set. Insert a toothpick into the cake between apple pieces in several spots. It should come out without wet batter, although it may pick up some moisture from the apples.
  • Let the cake cool in the pan for about 20 minutes. Loosen the edges if needed, release the springform ring, and transfer the cake to a wire rack to cool further. For the best crumb assessment, let it cool completely before slicing.

  • Recipe testing note: The 45–55 minute baking time is an estimate. Record the actual baking time and assess the cooled crumb, apple texture, sweetness, ginger intensity, and next-day texture before making further adjustments.

Best way to enjoy

With a cup of coffee or tea in the morning

Warm with a spoonful of sour cream or crème fraîche

Alongside a scoop of vanilla ice cream for dessert

Storage instructions, reheating

Room temperature – store the cooled cake loosely covered at room temperature for up to 2 days.

Refrigerator – for longer storage, place it in an airtight container and refrigerate for up to 4 to 5 days. Let slices come to room temperature before eating, or warm gently in the microwave for 20 to 30 seconds.

Freezing – this cake freezes well. Wrap individual slices tightly in plastic wrap, then place in a freezer bag or container. Freeze for up to 2 months. Thaw overnight in the refrigerator or at room temperature.

Next-day note – the crumb settles, and the flavors meld as it sits. Day two is genuinely better than day one. If you can resist cutting into it right away, it’s worth the wait.

Conclusion

A good apple cake should taste like something, not just be sweet and soft. This one does. The brown butter, the rye flour, the fresh ginger, the coconut sugar crust on top – every part of it is working. It’s cozy without being heavy, and it holds up beautifully over a few days, if it lasts that long.

FAQ

Can I use all all-purpose flour instead of rye flour?

Yes. Substitute the 60 g light rye flour with the same amount of all-purpose flour. The cake will be lighter and less complex in flavor, but the texture and structure will still work well.

Can I use regular granulated sugar instead of coconut sugar?

You can, but the flavor will be sweeter and more straightforward. Coconut sugar adds a subtle caramel note that pairs well with brown butter and warm spice. Light brown sugar is a closer substitute if you want to stay in that flavor range.

My center came out a little wet. What happened?

A few things can cause this: very juicy apples that weren’t patted dry, overmixing the batter, or pulling the cake a few minutes too early. Test multiple spots between the apple pieces rather than right next to them, and let it cool completely before slicing. It will continue to set as it cools.

Do I have to use a springform pan?

A springform pan makes releasing the cake much easier, but a standard 9-inch round cake pan will also work. Line it well with parchment paper and let the cake cool for the full 20 minutes before turning it out.
